Strawberry Chicken Salad

Strawberry Chicken Salad -- Pocketful of SugarFinally! A summer salad that actually eats like a meal. This is perfect for dinner or as a lunch prepared the night before work. Its fresh, its zesty, and its perfect for summer. The nice part about this is you can add whatever fresh ingredients you see at your Farmer’s Market! There are really no wrong ingredients for a salad: as long as you like it, toss it in. My recipe yields two heaping servings of yumminess. Here’s what I threw into my Strawberry Chicken Salad:

INGREDIENTS:

3 cups of lettuce/arugula/romaine

1/2 fuji apple, diced

1 1/2 cups strawberries, diced

3 oz brie, diced

1/2 cup caramelized pecans,

1 grilled chicken breast, sliced

*some other great ingredients that would be awesome in this: avocado, blueberries, pistachios, blackberries, mandarin oranges, sweet peas, goat cheese, sesame sticks, etc.

FOR THE DRESSING:

1 cup vegetable oil

1/2 cup balsamic vinegar

1/4 cup maple syrup

2 tsp dijon mustard

salt and pepper to taste

DIRECTIONS:

1. I’m not really sure why directions are needed, but why not.. Grill up your chicken, chop up your ingredients, pile them all up and ENJOY! Top it with your favorite dressing – might I suggest, the tangy homemade vinaigrette I prepared 🙂 Poppyseed or honey mustard dressing would also be delish!
