Buffalo Cauliflower Bites - Pocketful of Sugar

This is seriously without a doubt one of my new favorite recipes. These are the vegetarian version of regular Buffalo Chicken Wings but just as delish. I’m not a fan of imitation foods, but these are a success story on their own. Also, I’m not sure how much healthier these are for you than the real deal, but they’re still awesome and definitely worth a try. Okay, enough raving.. heres the recipe:

1 head of cauliflower, cleaned and cut into pieces

1 cup milk

1 cup flour

1 tbsp salt

1 tbsp garlic powder

2 tbsp melted butter

1 cup Sweet Baby Ray’s (or your favorite BBQ sauce)

1/2 cup hot sauce or buffalo sauce

DIRECTIONS:

1. Preheat oven to 450 degrees. Coat an aluminum foil lined pan with non-stick spray. I didn’t use non-stick spray and mine stuck to the foil 😦 Combine milk, flour, salt and garlic powder together in a bowl and whisk it all together until smooth.

2. Toss the cauliflower pieces in the batter and lay them out in a single layer on the pan. Bake the battered cauliflower for 15-18 minutes, or until they’re just beginning to turn golden brown.

3. While the cauliflower is baking, combine the melted butter, BBQ sauce, and hot sauce in a bowl. Remove the cauliflower from the oven and carefully pour and toss the cauliflower with the sauce mixture. Return the coated cauliflower to the oven and bake for another 5-8 minutes.

4. Remove them from the oven, let cool slightly, and serve immediately 🙂 Serve them with sides of celery sticks and blue cheese dressing and ENJOY!!
