Cinnamon Bun Popcorn

I’m back from Mexico! It was insanely fun and the weather was gorgeous, but I’m not quite ready to post about that yet, so in the meantime here’s my latest culinary creation:

Cinnamon Bun Popcorn (so easy and addicting!) - Pocketful of Sugar

My sister loves popcorn and my mother loves cinnamon rolls. Therefore, it only seemed fitting to combine the best of both worlds and make Cinnamon Bun Popcorn! It is so so good! Checking this idea off of my Food Bucket List! I’m thinking this is going to have to be a new holiday staple.

INGREDIENTS:

15 cups popped popcorn (about 3/4 cup kernels)

3 cups pecan halves, chopped

1 1/2 cups brown sugar

2 tsp cinnamon

1/3 cup light corn syrup or honey

1 1/2 sticks of butter (or 3/4 cup)

1 1/2 tsp vanilla

3/4 tsp baking soda

DIRECTIONS:

1. Preheat oven to 250 degrees. Combine brown sugar and cinnamon in a 2 liter capacity microwave bowl (the finished mixture will rise so the bigger the better). Mix well. Chop butter into chunks and place on top of sugar mixture. Pour corn syrup over the butter and microwave on high for 30 seconds. Stir to combine and return to the microwave for 2 more minutes. Remove and stir again, return to the microwave for another 2 minutes.

2. Remove mixture from the microwave and add in the vanilla and baking soda. Stir to combine. The mixture will foam and rise. Pour the caramel mixture over the popcorn and pecans and stir well so everything is well coated. Spread popcorn mixture onto 2 foil-lined jelly roll pans. Place in the oven for 30 minutes, stirring every 10 minutes.

3. Remove from oven and spread out on a large piece of aluminum foil, parchment, or waxed paper. When popcorn is cooled, break into chunks and ENJOY!
