It’s not an oxymoron or a typo, folks. These Chocolate Chip Cookies really are healthy! They’re grain-free, gluten-free, and actually packed with energy. They’re also nearly guilt-free (sans chocolate chips). The secret ingredient? Chickpeas! Health nuts, rejoice! Here’s my Grain Free & Gluten Free Chocolate Chip Cookie recipe:
INGREDIENTS:
1 16-oz can of chickpeas, rinsed and patted dry
2 tbsp vanilla extract
1 tsp cinnamon
1/3 cup regular peanut butter OR 1/2 cup natural peanut butter
1/4 cup agave or honey
1 tsp cornstarch
1/2 cup mini-chocolate chips
DIRECTIONS:
1. Preheat oven to 350 degrees. Combine all ingredients, except chocolate chips, in a food processor and process until very smooth. Stir in chocolate chips.
2. With wet hands, form dough into 1 to 1 1/2 inch balls. Place on a greased baking sheet and slightly press the balls to flatten the top. Bake for 12-15 minutes and let them cool on the pan for about 5 minutes. ENJOY your healthy snack!
