In this recipe I took a little shortcut (who doesn’t love shortcuts?) and used a boxed brownie mix and only made the cookie part from scratch. You could simplify this even more and use break-and-bake cookies as part of your recipe and I’m sure they would taste equally as awesome! Go with what you feel. This is my super-simple version:
1 box your favorite brownie mix + ingredients to complete brownies (oil, eggs, etc)
1 cup + 1 tablespoon all-purpose flour
1/2 tsp cornstarch
1/2 tsp salt
1/3 cup granulated sugar
1/3 cup light brown sugar
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 cup semi-sweet chocolate morsels
1. Preheat oven to 350 degrees. Spray muffin tins with nonstick cooking spray or line with paper liners. Mix brownies according to package instructions. Fill the muffin tins halfway with brownie mixture, set aside.
2. In a medium bowl, stir flour, cornstarch, and salt together and set aside. In a large bowl, cream together butter and sugars with an electric mixer until light and fluffy. Mix in the egg and vanilla until well combined, scraping the bowl when necessary.
3. With mixer on low, gradually add the dry ingredients until just combined. Do not over mix. With a spatula, stir in the chocolate chips until evenly distributed. Take tablespoon-sized heaps of cookie dough and add to the brownies in the cupcake tins. Bake at 350 degrees for 12-15 minutes or until toothpick comes out clean from the cookie center. Let the brownie cookie bites cool completely in the muffin tins and then transfer to a wire rack. VOILA! You’ve just made awesome Brownie Cookie Bites!
