Not many foods make me jump in a fit of joy, but the perfect avocado has that effect on me. I’m also a firm believer in the fact that you can never have too many ripe avocados on hand. Avocados have awesome health benefits (heart health, healthy fats, vitamin E powerhouse, etc, etc) so I often use those reasons to justify putting a dollop of guac’ on nearly anything that can hold it.
I’ve come to discover that this simple yet flavorful guacamole recipe is kind of a no-fail gem. There’s really no way you can go wrong with this recipe and it calls for very few ingredients, most of which you probably already have lurking in your spice cabinet!
2 ripe avocados
1/2 tbsp onion powder
1 clove minced garlic or 1/2 tbsp garlic powder
1 tsp salt
1 tsp pepper
1. Slice around the avocado, avoiding the seed in the middle and pull the halves apart. Using a fork, mash the avocado while its still in the skin, pulling the fork from the outer edge toward the middle of the avocado. I’ve found this trick works well in simultaneously removing the inside from the skin and pre-mashing it so you don’t have to chase the slippery avocado around the bowl in an effort to mash it.
2. Place the mashed avocados in a bowl and add the garlic, onion and salt and pepper. Stir all of the ingredients until the spices are mixed throughout. Enjoy with tortilla chips, pita chips, on a burger, sandwich, burrito or geez just eat it with a spoon.
